Oatmeal Chocolate Chip or Raisin Cookies by Betty Ann Harris

Ingredients
1 cup quick oats
½ cup rice flour
¼ cup oat bran
1 ½ teaspoon baking powder
1 ½ teaspoon cinnamon
½ teaspoon salt
2 tablespoons melted butter
½ cup honey
1 teaspoon vanilla
¼ cup egg whites
¼ cup semi-sweet chocolate chips or raisins
Directions
Mix all ingredients together except the chocolate chips/raisins
Place in freezer for 15 minutes
Form into flattened golf ball sized cookies (approx ½ inch thick) and place on cooking sheet lined with parchment paper
Press 5 or so chocolate chips or raisins into the top of each cookie
Bake for 15 minutes at 375 degrees
*It’s dairy-free, gluten-free, and low in sugar (refined sugar-free if you use raisins)
